Cranberry and Pistachio Cookies

Cranberry & Nut Cookies

These are simple to make and really tasty!

A definite crowd pleaser, why not try making a large batch and freezing so you can have them on demand!

If you are on the 6 week elimination diet please avoid the almonds and swap them for some walnuts or hazelnuts.



INGREDIENTS

Serves 6 or more.
2 bananas mashed
2 egg whites whipped to stiff peaks
1 cup oats (130 grms)
2 tbsp chopped macadamias
2 tbsp dried cranberries
2 tbsp ground almonds
2 tbsp dark brown sugar
1 tbsp cinnamon 



METHOD

Pre-heat the oven to 180 degrees and line a baking sheet with grease-proof paper.

Whip your egg whites to soft peaks in a large bowl.

In a separate bowl mash the banana to a smoothish paste, mix in the ground almonds first, then add all other dry ingredients.

Slowly mix into your egg whites a spoonful at a time using a metal spoon. Be careful not to overwork or over-beat the eggs as you will knock all the air out.

Place 1tbsp dollops onto a baking tray, bake for 20 mins 

Enjoy!

  3. First off I would like to say fantastic blog! I had a quick question which I’d like to ask if you do not mind. I was curious to find out how you center yourself and clear your head prior to writing. I have had difficulty clearing my thoughts in getting my ideas out there. I do enjoy writing but it just seems like the first 10 to 15 minutes are usually lost simply just trying to figure out how to begin. Any ideas or hints? Many thanks!

      Hi there, thank you so much for your comment. To be honest I don’t find writing comes that naturally to me and so often it takes me a while to get started! I always start by writing down the key points I want to cover, and then I go back and write around them. I always write from personal experiences which makes writing so much easier. I hope this helps!
