Cranberry and Pistachio Cookies

Cranberry & Nut Cookies

These are simple to make and really tasty!

A definite crowd pleaser, why not try making a large batch and freezing so you can have them on demand!

If you are on the 6 week elimination diet please avoid the almonds and swap them for some walnuts or hazelnuts.

Serves 6 or more.
2 bananas mashed
2 egg whites whipped to stiff peaks
1 cup oats (130 grms)
2 tbsp chopped macadamias
2 tbsp dried cranberries
2 tbsp ground almonds
2 tbsp dark brown sugar
1 tbsp cinnamon

Pre-heat the oven to 180 degrees and line a baking sheet with grease-proof paper.

Whip your egg whites to soft peaks in a large bowl.

In a separate bowl mash the banana to a smoothish paste, mix in the ground almonds first, then add all other dry ingredients.

Slowly mix into your egg whites a spoonful at a time using a metal spoon. Be careful not to overwork or over-beat the eggs as you will knock all the air out.

Place 1tbsp dollops onto a baking tray, bake for 20 mins

Hi, thank you for your comment, so pleased to hear you’re enjoying the blog! This blog post of ours goes through some of my most recommended resources, including two blogs – one by Emma Hatcher and the other by Alana Scott.
I will also soon be adding a new page which will have a whole range of links to blogs, charities, events, cookbooks and more which I wish I’d known about at the start of my IBS and FODMAP journey!
      Hope this helps!

First off I would like to say fantastic blog! I had a quick question which I’d like to ask if you do not mind. I was curious to find out how you center yourself and clear your head prior to writing. I have had difficulty clearing my thoughts in getting my ideas out there. I do enjoy writing but it just seems like the first 10 to 15 minutes are usually lost simply just trying to figure out how to begin. Any ideas or hints? Many thanks!

Hi there, thank you so much for your comment. To be honest I don’t find writing comes that naturally to me and so often it takes me a while to get started! I always start by writing down the key points I want to cover, and then I go back and write around them. I always write from personal experiences which makes writing so much easier. I hope this helps!

When I originally commented I clicked the “Notify me when new comments are added” checkbox and now each time a comment is added I get several e-mails with the same comment. Is there any way you can remove me from that service? Appreciate it!

Hi there, I’m really not sure to be honest! However, I will consult my web developer and keep looking for a solution. Is there a link on the email you get where you can unsubscribe or change your preferences? You could unsubscribe and then resubscribe to just our main newsletter?? I will keep looking for how you unsubscribe from the comments. Many thanks.
